A Windmill Tour of East Frisia

Drive across East Frisia on a clear day and the horizon does most of the talking. This corner of northwest Germany, wedged between the Dollart bay on the Dutch border and the Jade Bight to the east, is so flat that a church tower or a set of windmill sails can be seen from many kilometres away. And sails appear again and again: East Frisia preserves one of the densest concentrations of historic windmills anywhere in Germany. What follows is a tour through that landscape, its most famous mills, and the reasons so many of them survived here.

A Land Built for Wind

East Frisia, or Ostfriesland in German, occupies the far northwestern tip of Lower Saxony along the North Sea coast. Its geography reads like a checklist of ideal milling conditions. The land is almost entirely flat, a patchwork of fertile marsh soils near the coast, sandy geest ridges inland, and former peat moors between them. There are no hills to block the wind and few forests to slow it down, so the westerlies that sweep in off the North Sea arrive strong and steady. Water power, the great alternative in hillier parts of Europe, was never a realistic option in a region with barely any gradient for streams to fall. If you wanted to grind grain, hull barley, saw timber or lift water in East Frisia, wind was the obvious answer. For centuries, nearly every parish had at least one mill, and the miller ranked among the most important tradespeople in village life.

The Dutch Inheritance

The windmill type that dominates East Frisia today is the Dutch smock mill, known in German as the Holländerwindmühle. The name is honest about its origins: the design spread eastward from the neighbouring Netherlands, where engineers had perfected mills whose body stays fixed while only the cap, carrying the sails, rotates into the wind. This was a decisive improvement over the older post mill, in which the entire wooden body had to be turned. A fixed body could be built taller, heavier and roomier, with space for several pairs of millstones and generous storage floors.

East Frisian builders favoured a particular variant, the gallery smock mill or Galerieholländer. Its base is a stout brick tower, often two storeys high, encircled partway up by a wooden gallery. From this walkway the miller could set the sails, adjust the canvas or shutters, and manage the brake without ever climbing down to ground level. Standing on the gallery of one of these mills today, with the marsh stretching away in every direction, you understand immediately why the design worked so well here: the extra height lifted the sails above farmyards and trees into clean, uninterrupted wind.

The Twin Mills of Greetsiel

If East Frisia's windmill landscape has a postcard, it is the pair of mills at Greetsiel. This small fishing village in the Krummhörn, famous for its fleet of shrimp cutters and its gabled brick houses, is guarded by two gallery smock mills standing almost side by side at the edge of the village. One is clad in warm red brick tones, the other painted green, and together they form one of the most photographed motifs on the entire German North Sea coast. The twin arrangement is a happy accident of history rather than a planned ensemble, but it gives visitors a rare chance to compare two mills of the same type at a glance. The mills have long since given up commercial milling and now serve visitors instead, housing exhibitions, a shop and a place to sit down over a pot of properly brewed East Frisian tea. Greetsiel makes an ideal anchor point for any mill tour: from here, quiet country roads fan out across the Krummhörn, a marsh district whose villages sit on ancient dwelling mounds and where further mills appear at pleasingly short intervals.

Mills That Kept the Water Out

Grinding grain was only half the story. Large parts of East Frisia lie barely above sea level, and some polders lie below it. Before electric pumping stations arrived, the only way to keep such land dry was the same solution the Dutch had pioneered: the drainage windmill. These mills drove scoop wheels or Archimedean screws that lifted water out of the drainage ditches and over the dikes into higher channels, working day and night whenever the wind allowed. The Rheiderland, the district squeezed between the river Ems and the Dutch border, depended heavily on them, and it is here that rare survivors of this once common type can still be found, most famously the drainage mill at the Wynhamster Kolk, which served land lying below sea level. Standing beside a drainage mill, you grasp something essential about this region: the windmill was not a picturesque accessory but a machine of survival, as vital to the landscape as the dikes themselves.

The Windrose and the Miller's Craft

Look closely at the cap of an East Frisian mill and you will often spot a small auxiliary wheel mounted at the rear, set at right angles to the main sails. This is the windrose, the German counterpart of the English fantail. Whenever the wind shifted, it caught the moving air and, through gearing, slowly turned the cap until the main sails faced squarely into the wind again, entirely automatically. Combined with shuttered sails whose slats could spill excess wind rather like a venetian blind, the windrose freed the miller from constant vigilance and made the mills of this coast notably self-regulating. The craft remained demanding all the same. Millers had to judge the weather, dress the millstones, maintain wooden gearing that ground itself away with use, and know when an approaching storm meant stopping work and chaining the sails down. Many East Frisian mills preserve this machinery intact, and on grinding days you can still feel a whole building tremble as the stones turn.

From Working Mills to Living Monuments

Steam engines, then diesel and electric motors, ended the working era of wind power here as everywhere. Many mills were demolished or decayed; those that survive owe their existence largely to local mill associations, the Mühlenvereine, whose volunteers restore sails, renew thatch and shingles, and keep the old machinery turning. Their showcase moment comes each year on German Mill Day, held on Whit Monday, when mills across the country open their doors, set their sails turning and welcome visitors in. Surviving East Frisian mills have found remarkably varied second lives: some grind flour again for demonstration, others contain museums of rural life, cafés and tea rooms, galleries, or rooms where couples can be married beneath the old beams. The mill at Hage is often described as one of the tallest windmills in Germany, while towns such as Aurich, Norden, Leer, Dornum and Pewsum all keep mills of their own, so that a tour naturally threads together the region's most attractive places.

Planning Your Own Mill Route

A rewarding circuit needs only a few days. Many travellers start in Emden or Leer, loop through the Rheiderland for the drainage mills, continue north through the Krummhörn to Greetsiel, and then follow the coast eastward via Norden and Hage towards Dornum and Werdum before turning inland to Aurich. Bicycles suit the region perfectly: the land is flat, the lanes are quiet, and signposted cycle routes link village after village. Time your visit for a breezy day if you can, because a mill with turning sails is a different creature altogether from a static monument. Check opening days in advance, since most mills are run by volunteers, and leave room in the schedule for a proper East Frisian tea ceremony, taken strong, with cream poured over the back of a spoon and rock sugar crackling in the cup.
